西雅圖極品咖啡是國內第一個以重烘焙起家的咖啡連鎖店,一九九七年三月創業至今,已在台灣及北京開設了多家門市,同時也開發許多周邊商品於各通路販售,並致力於發展咖啡技術,期望能帶給消費者美好的咖啡生活。
我們的濃縮咖啡飲料專用豆,絕不假手他人,全由西雅圖的專業師傅親手操爐,確保咖啡豆最重要的新鮮度。不容諱言,創業之初我們也迷信國外品牌,從西雅圖進口烘焙好的咖啡豆,卻讓我們飽嘗不新鮮的苦頭,因為濃縮咖啡豆的烘焙度很深,容易走味,一旦出爐,不論以真空包裝或單向排氣閥【degassing-valve】,都無法確保重焙豆的新鮮度,大約一兩個月風味就已走衰。糟糕的是,從國外進口的咖啡豆即使以空運方式,加上報關手續,最快也要半個多月,有時拿到的咖啡豆還是一個月前烘焙,新鮮度完全沒有保障,即使吧台師傅手藝再好,也很難做出香醇的咖啡。
經此教訓我們跳出挾洋自重的迷思,於一九九八年設立Barista Coffee Roasting Company 供應自家店面最新鮮咖啡豆,雖然投資金額龐大,回收不易,但為了咖啡豆的品質,我們絕不妥協。新鮮度是西雅圖極品咖啡最引以為傲的利器。經過多年胼手胝足的奮鬥,西雅圖極品咖啡由一家個人創業的咖啡店,成為多家門市的中型連鎖體系,不但掌握經營技術,也致力於咖啡烘焙的研發,並期望以良好品牌知名度、店面操作實績、以及咖啡烘焙技術的作為我們努力的依歸,同時朝著華人第一專業品牌咖啡食品集團的目標邁進。

Barista Coffee
Barista Coffee is the first Taiwanese chain coffee shops, founded in Mar. 1997, that is characterized by deep roasted beans. Until now, Barista Coffee owned a lot of shops in Taiwan and Peking. Barista Coffee also developed various related products which are sold through a variety of distribution channels, and we make an effort to refine the skills regarding coffee. We expected to bring the consumers a beautiful coffee life.
Every single step during the producing process of beans for Espresso is taken care by Barista Coffee’s own roasters without the involvement of the others, which can ensure the most important factor for coffee: freshness. Frankly speaking, we, at the beginning of our career, also had a myth that foreign brands are better. Thus, we had been importing roasted beans from Seattle, but that brought us disturbances due to the lack of freshness. Because beans for Espresso was deeply roasted, it is apt to become stale after roasting. We could not keep it fresh by either vacuum packaging or degassing-valve, and its flavor will wane after around 1 to 2 months. To make matters worse, bean import, even by air freight, takes at least half a month, including the time for running the procedures for customs declaration. Sometimes, the beans were roasted 1 month before being delivered, which is totally without guarantee for its freshness. In such a situation, even we have the best baristas, it is still difficult for us to make a cup of coffee with well aroma and body.
Learning from the mentioned experience, we jump out of the cliché set by our myth. We established Barista Coffee Roasting Company in 1998, which supplied the fresh beans to our shops. Even though the amount of investment is too huge to recover the cost, we would not compromise the quality of beans. Freshness is one of the advantages that Barista Coffee are proud of. After our struggle for so many years, Barista Coffee evolved from a one-person coffee shop to a middle-sized system of chain shops, which not only controls management technique, but also dedicates ourselves to R&D of roasting skills. Also, we are urging for good brand reputations, outstanding performance of operation, and roasting skills, and we set becoming the leading professional coffee and food brand in Chinese-speaking region as our goal.
